PLEASE, make sure you read and understand the safety directions that came with your pressure cooker, BEFORE using it!


1 Tbsp. Olive oil
1 onion, chopped
2 cloves garlic, chopped
1 zucchini, cut into bite size chunks
6 cups chicken stock
1# shredded pork (From PC 
Pork Tenderloin Roast)
2 Tbsp. Chili fresco or chopped chiles
tea. Oregano
1 can hominy
head cabbage, chopped


Brown onion and garlic in oil
add zucchini, chicken stock, pork, chili fresco, oregano, and hominy
Cook until vegetables are tender.
Add cabbage just before serving, cook just a few minutes so it still has a little crunch to it.
