Spanish Chicken and Rice

WARNING

Ingredients:

1 Tbsp. Olive oil
1 ½ cups chorizo, crumbled
1-2# chicken breasts, cut into bite sized chunks
½ cup green olives
2 cloves garlic, chopped
1 cup rice
½ cup wine
1 can diced tomatoes
1 roasted red pepper

Directions:

Add all ingredients except olives and peppers to the pressure cooker. Cover and bring to pressure
cook 3 minutes
let pressure come down naturally (about 6 minutes)
Add olives and peppers, stir and recover.
Let stand a couple of minutes to let ingredients warm together.
